St Cera

A small but intense washed-rind cow’s milk cheese for those who like their cheese on the strong side. Expect deeply nutty, farmyardy flavours and a melting centre that may require a spoon.

Because St Cera is washed in its wooden box, and matured in the humid, moist environment of the cheese maturing rooms, it naturally follows that the wooden boxes can become a little damp. For this reason it is possible for various natural moulds to develop on the box. There is no need to be concerned. These moulds are perfectly safe and do not affect the flavour of the cheese at all.
